Welcome and thank you for visiting Pasta Gialla's website.
We are a small fresh pasta business located in Australia's beautiful Northern Rivers of New South Wales and sell our hand-made pasta at local markets. We draw from an inspirational year in Tuscany with our Italian family and their happiness in sharing their food and seasonal cooking styles.
We make our fresh egg pasta with newly picked ingredients from our own vegetable patch and from local farms and markets.
By adapting traditional Italian cooking approaches and 'handed-down' pasta tools to Australian local markets we hope to strengthen the Slow Food movement's goal '... to restore local food traditions and interest in the food we eat, where it comes from, how it tastes and how our food choices affect the rest of the world'.
As advocates for local produce and local producers, we use fresh farm ingredients sourced close-by and aim towards a minimal carbon-footprint.
We want to play a part in the renaissance of good food where colour, taste, texture and freshness drive the choices we make about the food we eat. Combined with reducing our impact on the environment, this is the philosophy behind Pasta Gialla.
